We've had some wonderful homemade treats brought to our guild meetings. Here
are a few of the recipes that have been submitted.
Toffee Bars (Vanya)
1/2 box of graham crackers
1 stick of butter
1 stick of margarine
1/2 cup sugar
1 cup sliced almonds (chopped pecans, if you prefer)
Preheat oven to 350'. Line a jellyroll pan with foil.
Separate crackers into single pieces and place on foil lined pan very close
together. Melt butter and margarine in saucepan. Stir in sugar and bring to a
slow boil. Cook for 2 minutes. Pour mixture over crackers and sprinkle with
almonds. Bake for exactly 10 minutes. Using a spatula, immediately remove hot
toffee bars onto a fresh sheet of foil to cool.
Quick and Easy Fudge (Vanya)
1 pkg. (lb) confectioners sugar
1/2 cup unsweetened cocoa powder
1/4 cup evaporated milk
1 stick butter/margarine
2 tsp. vanilla
chopped pecans (optional)
Line a 8 x 8 pan with foil. Sift together conf. sugar and cocoa into microwavable bowl. Add the evaporated milk and the stick of butter. DO NOT STIR!!! Place in microwave and cook for 2 1/2 minutes or until butter is just melted. Add vanilla and stir until all ingredients are well blended. You can add chopped pecans at this point if you so desire. Spoon into foil lined pan and smooth top. Place in freezer for 10 minutes to set.
Party Rye Bread (Pat B.)
1 loaf party rye bread
1 jar dried beef
Swiss cheese
1 stick of margarine, melted
1/2 cup finely chopped onions
1 tbsp. prepared mustard
Melt the margarine and add the onions and mustard and mix
together. Put 1 slice of beef with a piece of Swiss cheese between every other
slice of rye
bread, to make little sandwiches. Drizzle mustard mixture into each little
sandwich. Pour the remainder of the melted mixture over the top of the entire
loaf. Wrap completely in foil. Bake on cookie sheet at 350' for approximately 15
minutes. These are super easy and super quick.
Pineapple Cream Cheese Ball (Pam R.)
2 pkgs. 8 oz cream cheese, softened
1, 8oz. can crushed pineapple, drained
½ cup finely chopped green pepper
2 Tbsp. chopped green onion
1-1/2 tsp. seasoned salt
2 cups chopped pecans (optional)
Mix all ingredients together, reserving 1 cup of the
chopped nuts to dress the cheese ball. To form the cheese ball, line a
small bowl with plastic wrap, spoon the cheese mixture into the bowl. Chill for
1 hour, then invert the bowl onto the serving plate. Remove the plastic
wrap and coat the cheese ball with the reserved nuts.
Impossible Ham 'N Swiss Pie (Janet R.- served at the 2005
quilt show)
2 cups cut-up fully cooked smoked ham OR 12 slices bacon crisply
fried and crumbled
1 cup shredded natural Swiss cheese (4 oz.)
1/3 cup chopped green onions or chopped onion
2 cups milk
4 eggs
1 cup Bisquick baking mix
1/4 tsp. salt
1/8 tsp. pepper
Heat oven to 400 degrees. Grease pie plate, 10 x 1/2 inches. Sprinkle
ham (or bacon), cheese and onion in plate. Beat remaining ingredients
until smooth, 15 seconds in blender on high or 1 minute with hand beater.
Pour into plate. Bake until golden brown and knife inserted in center
comes out clean, 35-40 minutes. Cook 5 minutes. 6 to 8 servings.
Banana Pudding (Susan W. - served at the 2005 quilt show)
8 oz. Cream Cheese
2 small pkg. Vanilla Instant Pudding
1 can Eagle Brand milk
3 cups. Milk
1 tsp. Vanilla
8oz. Cool Whip
Bananas
Vanilla Wafers
Cream the cheese and dry puddings with milks. Add Cool Whip and vanilla. Beat until smooth. Layer wafers, sliced bananas and pudding. Repeat.
The Next Best Thing to Robert Redford (Brenda H.)
Layer 1: 1 cup flour
Mix and press into bottom of 9 x 13" pan. Bake at 350 for 25 minutes
or until
1 cup nuts (chopped very fine)
lightly browned. Cool.
1 stick butter (melted)
Layer 2: 1-8oz. cream cheese
1 cup powdered sugar
Mix together and lay on top of crust.
1 cup (or 1/2 of a 16 oz.
container) Cool Whip
Layer 3: 1-5.1 oz. instant chocolate pudding
1-5.1 oz. instant vanilla pudding
Mix and layer on top of previous layer.
3 cups milk
Layer 4: 8 oz. Cool Whip
Spread on top and sprinkle with nuts
Chopped Nuts
Swedish Nut Cake (Wandah)
Cake
2 cups sugar
2 eggs
1 20-oz. can crushed pineapple (unsweetened-in its own juice)
2 cups all-purpose flour
2 tsp. soda
1 tsp. vanilla
1/2 cup chopped walnuts or pecans
Cream together 2 cups sugar, 2 eggs, and pineapple. In separate bowl, sift together 2 cups flour and 2 tsp. soda; add to the sugar mixture. Add vanilla and nuts. Place in 9" x 13" sheet cake pan and bake at 350 degrees in pre-heated oven for 25-30 minutes.
Icing:
1 stick margarine, room temperature
8 oz. cream cheese, room temperature
1-3/4 cups powdered sugar
1 tsp. vanilla
1/2 cup chopped walnuts or pecans
Cream together margarine, cream cheese, powdered sugar (may need more, depending on spreading consistency), vanilla and nuts. Add enough milk to make it spread easily. If you add a little too much, add more powdered sugar so that it spreads easily.
Amazing Apple Dumplings (Pat B.)
Slightly less than 1 cup sugar
1/2 cup butter (no margarine), melted
1 tart apple peeled and cut into 8 wedges
1 package of Pillsbury Crescent Rolls
Cinnamon/sugar mixture for sprinkling if desired
1/2 can of Mountain Dew (no other soda will do)
Combine sugar and margarine. Set aside. Separate dough into crescents and roll up apple wedge into each section. Place in lightly greased baking pan 1-2 inches apart. Pour butter/sugar mixture over dumplings. Sprinkle with cinnamon/sugar mixture if desired. Add 1/3 to 1/2 can of Mountain Dew to pan and bake at 350 degrees for approximately 30-35 minutes or until golden brown on top. Serve warm, with ice cream if desired.
Note: if doubling the recipe, make sure the baking pan is large enough to ensure that the dumplings don't touch, or bake each recipe in separate pans.
Cracker Jack Cookies (Debbie W.)
1-1/2 cups flour 2 eggs
1 tsp. baking powder 2 tsp. vanilla
1 tsp. soda 2 cups oatmeal
1 cup butter or margarine, softened 2 cups Rice Krispies cereal
1 cup sugar
1 cup brown sugar
Sift together flour, backing powder and soda. Set aside. Cream butter and sugars. Add eggs and vanilla; mix well. Gradually add flour mixture. Add oatmeal, cereal, and coconut. Hill dough about 1 hour. Place heaping teaspoonfuls onto lightly greased baking sheet. Bake at 375 degrees for 10-12 minutes. Let cool for a minute before removing from cookie sheets. Cook cookies on rack. Makes a bunch!
Mexican Roll Ups (unknown)
8-10 large flour tortillas
8 oz. cream cheese
8 oz. sour cream
1-1/2 cups sharp cheddar cheese
1 small can black olives (chopped and drained)
1 small jar pimento (chopped and drained)
1 Tbsp. minced onions (moisten dehydrated onions)
1 tsp. garlic salt
1 small can green chilies (chopped and drained)
Mix all ingredients. refrigerate for a short time. Spread mixture thinly on large flour tortillas. roll tightly. Press as rolling to force mixture to edges of tortilla. Refrigerate to allow firmness. Cut into 1/2 inch pieces. End sections should be used for cook's tasting as they will not be as attractive.
